Meatless Monday: Cool Beans, Hot Jazz and More Ways to Celebrate the International Year of Pulses  
Nutrition, sustainability, versatility, affordability, sheer deliciousness -- there's so many reasons to love dried beans, especially now, the International Year of Pulses. I've been celebrating all year, blogging, teaching and presenting about them, including later this month at Farm to Table Experience in New Orleans, but my favorite way to celebrate is to cook and share them --a pot of pulses brings the fun. I'm soaking red beans now to have a pot of red beans and rice ready for August 4, Louis Armstrong's birthday. The jazz great so loved New Orleans and the city's signature dish, he'd sign autographs, Red beans and ricely yours.

Like many bean dishes, RBR, was created as dish to satisfy the belly and stretch the budget. Honoring culinary traditions are part of the pleasure of cooking and eating for me, but so are riffing, innovating and reinterpreting, doing with ingredients what musicians do with melodic form -- kitchen jazz. Pulses welcome that. Their meaty but meatless chew invites me to create vegan versions of classic dishes. Armstrong's own RBR recipe, like most, includes pork. Mine swaps plants for pig but loses no flavor.

Both Armstrong's RBR recipe and mine require slow cooking, letting the beans simmer over low heat with no fuss. You get on with your life, the beans get on with theirs. Over time, a dish of simple ingredients develops rich, umami, complex flavors, so you end up with something greater than the sum of its parts.

Basic supermarket beans will do, but heirloom recipes deserve heirloom ingredients. I think they offer deeper flavor, deeper connection and a little romance -- I'm for all three. So is heirloom bean purveyor Rancho Gordo. By supporting smaller farmers producing beans from open-pollinated seeds, Rancho Gordo has introduced us to beans of every color, size, texture and flavor, reflecting America's rich crop diversity.



Slow cooking beans from scratch does something magical to them, endowing them with a creamy tenderness, infusing them with whatever spices and ingredients you pair them with. Problem is, we're less and less likely to invest the time -- slow cooking -- or any cooking -- requires. Lucky for you Better Bean Co. is glad to do the work for you. Better beans aren't dried, they're not canned, they're slow cooked, and skillet finished, generously seasoned and sold fresh and ready to eat in tubs in refrigerated section of many grocery stores. They're innovators with an old fashioned ethic -- they're small, family-owned and all their beans -- including some red beans Armstrong might have gone for-- are vegan and organic.



Pulses aren't just versatile in the kitchen, they're friendly in the field. Growing pulses requires a fraction of the water of raising livestock. Family-owned Fresh Nature Foods goes one better by producing extra low water-chickpeas. They're green -- green as in sustainably farmed and green as in color. They're fledgling chickpeas, if you will, picked sweet and early in the growing stage, nutrient-dense and GMO-free. Fresh Nature Foods has just wrapped up a healthy and sustainable green chickpea harvest. Their frozen green chickpeas are being used in food service from schools to restaurants. Now they're making their way to markets, along with green chickpea hummus.

Green is the New Black (Green Chickpeas With Black Rice and Green Tahini Dressing)

Whether it's red beans and rice or rice and chickpeas, beans and rice is the most important dish in the world. Here nutty-flavored, nutrient-dense black rice changes it up from basic brown, so do sweet green chickpeas instead of the standard blonde ones The parsley-infused tahini dressing has a bold flavor and adds a designery pale green accent to a dish that may be served hot or -- to beat the summer heat -- at room temperature.

For black rice:

1 cup black rice
2-1/2 cups water or vegetable broth
sea salt to taste
juice of 1 lemon (about 2 tablespoons)

In a large pot set on high heat, bring water or broth to boil. Pour in the rice. Cover, reduce heat to low and simmer for 30 minutes. Grains will swell and become tender but retaining some chew. Drain off any remaining cooking liquid. Add sea salt to taste and lemon juice, Set aside.

For the green chickpeas:

2 cups green chickpeas, thawed (you can also use the standard blonde ones)
1 handful each mint, cilantro and flat-leaf parsley, finely chopped
2-3 tablespoons green tahini dressing (recipe below)
sea salt to taste

Pour 1-1/2 cups of the chickpeas into a large bowl, reserving the remaining 1/2 cup for garnish. Add the chopped herbs to the bowl, mix together and add 2 to 3 tablespoons of the green tahini dressing. Season with sea salt.

For the green tahini dressing:

1/4 c lemon juice
1 clove garlic
1/2 cup tahini
1/2 cup water
1 cup flat-leaf Italian parsley, tightly packed (about 1/2 bunch)
1/4 teaspoon sea salt
pinch turmeric (if desired)

Whizz everything together in a blender or food processor until thick, creamy and smooth. Cover and refrigerate. Dressing will thicken as it chills. Thin with another 3-4 tablespoons of water, if desired.

Makes 1-1/2 cups, or 8 to 10 servings. Dressing keeps covered and chilled for a week.

To assemble:

Mound dressed chickpeas atop black rice, garnishing with the 1/2 cup of plain chickpeas for an extra pop. Pour remaining green tahini dressing in a bowl to drizzle on top, if desired.

Serves 4 to 6.

A simulation of a pulse of vertically polarized light that's 400 nanometers (nm) and showing 100 nm scale localization when passing (left to right) through a funnel configuration of 30 nm diameter silver nanowires. The purpose of this research, carried out at Argonne National Laboratory, was to learn how to control visible and near-visible light on the nanoscale (nanophotonics) with future generations of optical and electronic devices in mind.

A new way of fixing inactive proteins has been discovered in algae that uses chloroplast extracts and light to release an interrupting sequence from a protein. Many proteins contain extra sequences, called insertions, that can disrupt their function. This research demonstrates that the algae Chlamydomonas reinhardtii has the necessary toolkit to repair proteins by removing these insertions. This repair system may have applications in agriculture and biotechnology because it could potentially be harnessed to enable proteins to become active only in the light.

For Animitas, by the great French artist Christian Boltanski, takes its title from the Chilean roadside shrines honouring ancestral souls. Boltanski's labels are nameless, however, as if to embrace all the dead of the world. His installation murmurs now in the Scottish air, releasing its song, but those currents pass freely all over the globe.

Matt Damon reunites with Paul Greengrass for this fifth instalment of the Bourne series a head-spinning, post-Snowden cyber-thriller

With 2004's espionage sequel The Bourne Supremacy, director Paul Greengrass changed the face of popcorn thrillers, combining the docudrama grit of Bloody Sunday with super-slick thrills that left the Bond franchise in the dust. So successful were the Bourne movies that when Greengrass and leading man Matt Damon walked away from the Robert Ludlum-inspired series after the perfect ending of 2007's The Bourne Ultimatum, the studio cooked up The Bourne Legacy, an empty actioner with a gaping hole where its star and soul should be, idly trading on the memory of past glories.

Now, after reuniting on 2010's underrated Green Zone, Damon and Greengrass are back with Jason Bourne, a breathlessly confident thriller with a self-consciously modern edge that casts its antihero adrift in a post-Snowden world of surveillance and social media. Replete with heated exchanges about the pay-off between personal privacy and public order, the new movie (written by Greengrass and his long-term editor, Christopher Rouse) combines fist-fighting with cyber-stalking in impressively ruthless fashion, barrelling through its contemporary landscape like a cinematic bull in a rolling-news china shop.

Damon injects a much needed air of humanity. His speech may be sparse, but his body is expressively talkative

HBO's Westworld premieres on Oct. 2 at 9 p.m., just shy of two years after it was first announced in 2014.

To Ringo With Love - A note from Ol Pejeta  
In July, I had just returned from working in Kenya on The Nobelity Project's education and conservation projects and received some heart-breaking news. Ringo the baby rhino had died.

As I reported on HuffPost in February, our friends and partners at Ol Pejeta Conservancy had found and rescued an orphaned baby white rhino. The Conservancy was facing substantial cost to raise this baby and release him into the wild, and I'd offered to reach out to Ringo Starr and ask if we could name the baby rhino in his honor. Ringo The Beatle has long been a supporter of rhino conservation issues, and we hoped a baby rhino sharing his name would help shine a light on the decimation of rhinos. Illegal poaching over the past 20 years has reduced global rhino populations by over 90%. Without global action, all rhino species may be wiped out.

Ringo Starr quickly gave his name to the baby, and also joined The Nobelity Project and many individual donors who joined us as sponsors of Baby Ringo's care. In the months following my HuffPost announcement, stories by BBC, CNN, The Dodo and many others began to turn Baby Ringo into the poster child for saving the rhinos.

Raising an orphaned baby rhino is no simple task. I spent time with baby Ringo in June and posted a Father's Day story on the budding father-son relationship between Ringo and 7,000-pound Sudan, the last remaining male Northern White Rhino in the world.


TO RINGO WITH LOVE - OUR NEW FILM ON THE CONTINUING WORK OF OL PEJETA CONSERVANCY

The weather was cold when I was with Ringo in June, and perhaps his Masai blanket, his bed of straw and even his caretakers sleeping with him were not the same as huddling with a mother rhino. The giant baby bottles of formula given to the infant rhinos can only be only an approximation of mother's milk. Some rescued babies survive; many do not. Knowing that did not lessen the emotional toll of the news of Baby Ringo's death.

So many people loved this little rhino. How could Ol Pejeta and The Nobelity Project respond to those who had reached out to assist in this effort?

For the past four years, I've been filming the integrated conservation work at Ol Pejeta. I'd documented the conservancy's efforts to save the Northern White Rhino species. The last three Northern Whites live there under heavy security, and an effort is underway (and currently seeking funding) to use in-vitro fertilization and a surrogate Southern White Rhino mother to save the species.

I had assisted and filmed the relocation to Meru National Park of two fence-breaking elephants who'd been invading neighboring communities. Darted from a helicopter and attended by a big team of rangers and veterinarians, the first elephant was lifted by crane onto a transport truck where Dr. Henrik Rasmussen of Savannah Trackers had drilled a hole into his trunk and embedded a tiny electronics package that would secretly track the tusk if the elephant was killed by poachers. "It's not enough to stop a poor poacher with a rusty rifle," Henrik told me as we drilled. "This could help us track the buyers and sellers, possibly all the way to a final buyer in Asia."



I'd come to know the rescued chimps at Ol Pejeta's Sweetwaters Chimpanzee Sanctuary, including Poco, who had spent years of his life in a tiny cage suspended from the roof of a petrol station in the Congo. After he was rescued from this imprisonment, Poco was brought to Ol Pejeta, and had been in his tiny cage so long, he was unable to walk on all fours. Though he has since learned normal chimp mobility, he often strolls around upright like a human as he shares this large sanctuary with 38 other rescued chimps.



I'd learned that the last two female Northern White Rhinos tolerated my presence, and that the Southern White female who we hope will be a surrogate mother, is not so friendly to me. Trying constantly to do an end-around to get to me while I film, she still responds to verbal communications to stand down from head keeper Zachary Mutai who lives night and day with these rhinos. "I think like a rhino," Zachary told me once as I was filming. "I love use animals and they teach me about animal behavior."



I met the 39 armed rangers who protect the rhinos and other wildlife in this 110,000-acre conservancy. Following a scent trail, I was unable to keep up with a beautiful bloodhound who'd previously tracked and located a poacher after a 30 kilometer pursuit. There are eight wonderful bloodhounds, brilliant explosive/gunpowder sniffer dogs and ferocious attack dogs at Ol Pejeta. Stopping poachers is serious business, and the jobs of African wildlife rangers - and their dogs - are some of the most dangerous on earth.

I'd also come to love the tourist side of Ol Pejeta, having enjoyed the hospitality at Sweetwaters tented lodge, at Ol Pejeta Bush Camp, Pelican House and other visitors accommodations. The more I go, the more I want to go back.

Ol Pejeta Conservancy is a nonprofit, with proceeds from tourism and integrated cattle operations generating funds for improving livelihoods in thirty surrounding communities. "If you asked me what is the most important thing we can do to combat poaching," Ol Pejeta CEO Richard Vigne told me, "it would be to have good relations with our neighbors."

These good relations provide critical intelligence about strangers coming to the area with offers to purchase a horn or a tusk. Though poachers sometimes succeed, the rhino population at Ol Pejeta is increasing. This is a model that works.


ERERI PRIMARY WATER SYSTEM FROM THE TURK WINE, TURNING WINE INTO WATER

Inspired by Ol Pejeta's community partnerships, and funded by Treana Winery's the Turk Wine, The Nobelity Project partnered with Ol Pejeta this year to build a clean water system at remote Ereri Primary on the northern side of the Conservancy. After a celebration with the kids, we all had a clean water toast to their friends at Ol Pejeta.

So how could we respond to the death of Baby Ringo? By honoring his brief and wonderful life and highlighting the ongoing critical conservation work at Ol Pejeta. Our new 9-minute film (near the top of this post) show all this work sand more, and is dedicated to the memory of Ringo the Baby Rhino.

I have a deep love for the animals and the people of Ol Pejeta. If you take a few minutes to watch some of what I've witnessed first-hand, I think you'll share in some of that love.

Together, we can Save the Rhinos. Together, we can honor Baby Ringo by guaranteeing countless generations of baby rhinos to come.

Amidst criticism over whether or not the city is equipped to host, the 2016 Summer Olympics will descend upon Rio de Janiero, Brazil in just under a week, bringing hundreds of thousands of people to the sprawling seaside city for the first Summer Games hosted in South America. Athletes around the world have been training and participating in Olympic trials and tests to qualify for the big event. And for the first time in history, The International Olympic Committee named 10 refugee athletes — from Syria, South Sudan, Ethiopia, and the Democratic Republic of Congo — who will compete as Team Refugee Olympic Athletes.
